yes and that is my prefered way. Not that breaking a tendon can't happen but it has never happened to me. I have done countless deer that way to. Back in my public land hunting days when skinning was done at the nearest hanging branch and it was 9pm before i got the deer out and all I had was head lights I could undress a deer in about 10 minutes and having him in the cooler. I work a lot slower these days.

But yeah that's how processors clean them and deer a like. Now if your scared you can use a adjustable chain with a hook on the end and wrap around your spreader bar and run the hook in to the pelvic bone. This will add some strenght and help out the tendons.
