I generally find the pedal feel okay, maybe slightly light. The problem I have is that my size 16 shoes tend to be too big for the small pedals, I will be under hard excellaration and all of a sudden my foot slides of the pedal.

I love the light throttle on the smooth road. My work truck is a ford and i drive through fields pretty often...without being able to keep the throttle steady definately makes it jump around more. I could imagine the titan being a lot worse in a situation like this.
I've never minded the spring tension. What bugs the heck out of me is how jumpy it is just off idle. I'd rather have more control just off idle. With my Tundra, I can get very smooth starts without even thinking about it. It takes a lot of attention to get a smooth start with my Titan.
The feel of the pedal is ok for me. I think it has to do with foot position and suspension. The only off roading that has caused any sort of problem would be in a river bed with giant river rocks, then again, I think any vehicle would be jerky in that situation.

The sensitivity of the pedal is noticable for sure and could be better, but I have to agree that the pedals are too close together! I have scared myself several times when braking because my foot was on both brake and accelerator and I didn't know it. I wasn't stopping quickly enough and more pressure on the pedal wasn't working... then I realized I was also pushing the accelerator. No wonder it wasn't stopping. The problem is realizing what is happening before you run out of time to lift your foot off the pedals and hit the brake again.
In my case I'm seeing the rear end of the car stopped in front of me and thinking I'm not stopping quick enough ...I apply more pressure and it's getting critical. Then I feel the engine RPMs rising and realize what's happening. I lift my foot off the pedals and go full brake just in time to screetch to a stop with about nothing but my guardian angel between the bumper of the car in front and me bloodying my titan's nose.
For a vehicle with no need to use a " heel and toe" technique, they should address this design issue.

I think it sucks. The amount of force required to move the pedal is okay. But the first milimeter of travel is 90% of the throttle. Way too hard to control. I get tired of chirping the tires. Everybody thinks I'm trying to race them. Then when you really want to go, you don't get any added power, it was already floored. I believe it was intentional. Can you reprogram the throttle response with one of these software packages?
It doesn't bother me much but I do know what you are talking about. At least it's no Mercedes. Now those are some pedals that can use some lightening if some of you know what I'm talking about.

Mine is very linear. Push it a little and get a little acceleration. Push a lot and get a lot.
My Chevy PU that the Titan replaced and my wife's Accord had the same problem. I fixed both of them with a little spray on lithium grease on the throttle cable.
