I had seen this deer on camera and wanted her taken out for two reasons, but I thought it was two different deer. Come to find out the same deer had two issues. The first was a picture I posted a while back of a deer with a leg injury, but when we shot her I didn't know this was the one with the leg injury. The reason we picked her was because of the large lump on her neck. So we go both of the deer we where after with one shot. We saw 4 does tonight, this was not the oldest one, but I felt it was the right one to take out. He shot her with a .243 at about 60 yards, and she went about 40 yards. Blood at the site he shot her at, but no other blood until where she fell. Unfortunately she was only 2.5.
Lump on neck
Injury to leg from some other hunter, that apparently can't shoot as good as my 10 year old.
Perfect heart shot.

He does pretty dang good for a 10 year old. He shots my .30-06 out to 250 yards at hogs. I don't trust him enough at that range for deer, but he is doing good on hogs.

Great now just do a write up on how you debone the hind quarters, ive gotten into doing jerky in the last two years, and let me tell you slicing it into strips straight off of the hindquarter sucks... lol

I suck at writing, but once you get the film (slimy stuff) off the meat you will see lines in the meat (they are white in color). The lines are where the different muscles end. I just find a line, and start cutting down it. Once you are through where they connect you will see the two cuts of meat. Just follow the cuts and pull off each section. You will end up with I think 5 different cuts of meat off each back leg. The little pieces like on the front leg I just use for stews and such. I can try to take a few pics while I do it tomorrow if I can remember.

thanks man. that would be great. im thinkin if i could remove the entire muscle at a time i could use a meat slicer to cut the strips. Do you partially freeze it before deboning it?
