there are alot of companys that sell kits, basically they build the house and its up to you to get it wired, plumbed, etc.
Jim barna homes comes to mind, check them out. my mom and dad went through jim barna about 15 yrs ago when they bought a log house. log homes are great, but just like everything else there are a few downfalls, one being upkeep, the wood really soaks up the stain, and you need several coats every year or two untill the wood soaks it up good, i painted every summer for 6 yrs, took about 1 full week to get everything. at this point 1 coat every 3-4 yrs. you could always hire someone to do it, but we found out pretty quick that didnt work, just cant trust someone else not to cut corners, so we did it ourselves.
