Titanallover: Height or width? You might squeeze 34's (you'll have to calculate if you are looking at metric sizes, based on the width in metric millimeters and the aspect ratio), but it seems that the most common complaint is when width gets up into the low 300 millimeter range.
I have 17 inch rims with 285/70's. They are 33 inches tall. I believe I could go one inch taller, but no wider safely, due to both rim width and concerns about rubbing. There are 17's out there which can give you that inch without having to go to wider rims or a suspension lift.
What is your present tread width? 265? If you like your 18's stick with them, but it is sort of a new size for factory rims and there are not a lot of choices out there yet like there are for the 17's or for those who go up to 20's. I think your rims are a little wider than my 17's and can handle some more tread width safely, if you don't go so wide as rub the frame or fenders, especially the front when turning sharply.
If it is practical "meat" you want on the road, the 285/70 17's at about 11.3 inches wide have loads of grip. I don't see how going wider gets you any real benefit with a truck chassis and suspension. Even with VDC turned off, it is hard for me to break the 285's loose in first gear at full power.
But if it is a certain look you are after, maybe someone here with 20's or bigger can give you some advice from their experience. If you are trying to go higher by using tires (rather than a lift) be aware that you will loose gearing and your speedo will not be accurate. I guess you know all of that.
