Mt. Zion Park - Places to off road and visit

Wife, son and I are driving up to Mt. Zion National Park in Utah for a three day trip at the end of this week and taking the Titan.

We've never been there before and besides the normal hiking and other stuff, what would you regulars recommend? Any places to go offroading that is nearby? Wife will require me to stay on trails that are easy to only moderate, particularly since we'll be on our own. She's not much into off roading so this trip isn't for that, or I'd take a side trip over to Moab. Maybe next time...

Any recommendations on restaurants or other sites to see in the area? We'll be there for two full days and three nights.

are you going to take I-15 through las vegas? If you are then get off at the "Apex" exit at the VERY VERY north end of Las Vegas. Right at the "intersection" of Las Vegas BLVD and I-15 there is nothing but wide-open desert with truck trails and ATV trails in an area known as APEX industrial park. There are no buildings but someone named it that anyway for some reason. Tons of offroading there and there are tons of trails. There are even some dunes if you can find them!

Thanks. We may just check that out on the way back.

Anyone know of anything up near Zion or that area? Some tame offroad trails would be cool as well as other tourist sites, antique stores, etc.
