I just got a leveling kit but do not have the install instructions, does anyone know where I might be able to get these?

No problem. I considered the Top Gun Customz myself, before talking to Greg at PRG myself over the phone. He convinced me to use his product and takes the time to answer all your questions and concerns.
When I emailed Top Gun Customz asking about the installation, they sent me a Word document with just the following text inside (no pics, sorry):
1. Before beginning, read instructions completely.
2. Jack the front of the vehicle as per manufacturer recommendation and
support with jack stands. Lift front enough to raise the front tires off the
ground.
3. Remove the front tires.
4. Jack up slightly on the lower control arm and separate the upper ball joint
from the spindle where it attaches to the upper control arm. We use a
2-arm gear puller so as not to damage the ball joint rubber boot. A ball
joint separator can also be used. If neither is available to you, you can loosen
the nut to the end of the threads and slightly tap on the nut with a hammer.
These vehicles are still new enough that they usually come right out
5. Remove three upper strut nuts on the strut tower on each side of the vehicle
that holds the strut assembly (the assembly with the coil spring) to the strut
tower (the bucket attached to the frame that the strut assembly bolts to).
6. Disconnect the sway bar end links from the lower control arm.
7. Lift the upper control arm up. Now lower the strut assembly down from the
upper strut tower by lowering the floor jack under the lower control arm.
Remove the main lower strut bolt and pull outward on the strut to clear the
upper strut tower. Remove the strut assembly from the vehicle. You should
now be able to access the upper strut plate. (Top of strut).
8. Install one of the steel spacers on top of the strut and use the FACTORY
NUTS to bolt the spacer to the strut. Torque the three nuts to 25 ft. lbs.
9. Re-install the strut back in the upper strut tower and re-install the lower strut
bolt and torque to 125 ft lbs.
10. Jack up the lower control arm slightly and using the HARDWARE
PROVIDED, bolt the strut back up into the strut tower. Tighten all three nuts
to 25 ft. lbs.
11. Connect the upper control arm to the spindle. Torque as per OEM specs.
12. Repeat procedure on the other strut.
13. Reconnect the sway bar end links after both sides have been completed.
14. Install the front tires.
15. Carefully lower the vehicle to the ground and torque lug nuts to OEM specs.
specs.
16. HAVE VEHICLE ALIGNED. Re-aligning the vehicle must be done to allow
the suspension to relax to its proper ride height (the tires will be toed-in
which will cause excessive tire wear and will force the front to sit higher
than it should). Re-aligning the vehicle is recommended with any lift/
leveling kit. Re-torque all bolts after 300 miles.

Is this something that can be done in a garage with basic knowledge? How long would it take? Do the springs have to be compressed or do they stay connected when they come out?

Yes, it can be done with basic knowledge but it will take longer. Suspension components are usually fun because they're hard to break, and require some muscle to put on/take off. I think somebody who has done a level kit before can probably do it in 1-1.5 hours, but for a newbie it's best to take his time and take pictures and probably shoot for 3 hours or so. This is probably the easiest suspension modification you will do. It's equivalent difficult IMO to installing an exhaust system.
The only tool you may not have is the gear-puller (really not necessary) and a torque wrench that can handle 125ft/lbs.
