gr8titan, how is your throttle set up? I have three total: a single for forward/neutral/reverse and seperate ones for the gas for each engine...
Also, I was watching a video with jet boats, so last weekend I gave it a shot with two of my buddies in the boat...Go full speed (52-54 MPH) and cut the wheel as hard as you can. You literally do a 360 and when you get all the way around, straighten out the wheel and you come out of the hole never having to let off the gas. It was hysterical, I had to do it about 15 times...we were in the intracoastal and had people calling for us to do it again.
My Yamaha is set up like yours. Three levers total. One lever for forward-neutral-reverse and two levers for individual throttle for each engine. When on a "no-wake-zone", I throttle the engines like a "skid loader" or a "bulldozer".
More throttle on the right engine makes the boat head left and vise-versa.
When you do the 180-360 degree turns, try doing it left-turn. You will get more stability on the boat.
Another fun thing to do with jetboat or jet-skis is the "submarine dive". Ask 2/3 of your passengers to go in the forward seats and HOLD firmly. (1) Go full throttle straight forward - (2) when at top speed, suddenly throttle DOWN to idle - (3) immediately turn lever from FORWARD to REVERSE - (4) then throttle UP both engines while at REVERSE for a short period of time (2-3secs) . The nose of your jetboat will go under water and scoops tens of gallons of water like a submarine. Everyone in the boat will get SOAKED!!
When doing this for the first time, throttle UP both engines in quarter amounts until you feel comfortable with the technique and the amount of water coming in. ALSO: remember to turn on the bilge pump before the run and allow boat to empty before each "sub-dive". Kids love it and wife hates it!
Note: On jetboats (Yamaha in particular) the turbine spin DOES NOT change direction when going from froward to reverse. The "scoops" just cover the water jet blast so it goes the opposite direction. No transmission to screw-up.

See-Doo have the same type of one piece scoop for reverse my kawasaki jetski had the same thing.

I was going left and right and I did notice it was much more stable going to the left...'skidded' more to the right. The way my bow is set up the tip of the nose actually dives under a little when going to the right and that was with 600lbs of guys sitting in the back/middle.
I think I'd be a little nervous about diving the nose under too far...
As far as the forward/reverse, mine is set up the same way, the shields just go down to flow the water under the boat...

Here's mine: My 2004 SE 4x4 with my 2002 Chaparral 240 Signature, on the ramp at Wahweap Marina, Lake Powell, Utah.
This will be the 5th year I've been towing the boat the 11 hours from San Diego to Lake Powell, through 110+ degree heat, non-stop (except for the 4 gas stops that are required). The boats weighs roughly 8,200 loaded for a week-long trip. I usually pull around 65 mph and the steepest grades (outside Baker, CA and the Cajon Pass) usually keep me about 55 mph. The titan tows strong, stable and smooth, and better than my Excursion 4x4 Diesel did.
The only bummer is that I'm on my 4th rear axle/diff at 60,000 miles. All have been replaced under warranty and I was never stranded, but still quite sucky!
