If you run 35" tires (I'm sure you are) you will lose pulling power. The 35's are taller and heavier with a larger contact patch. All this adds up to more rolling resistance. The bigger diameter also affects the final drive ratio, giving the feeling you are running taller gears in the differential. So you
will feel a difference.
As far as capacities go, nothing should change, however you will be heavier, thus lowering you cargo carrying capacity. Also, be careful if you use lift blocks in the rear. Most are cast aluminum and may not react well to a heavy load, but Im guessing your boat probably only has a 700 lb or so tongue weight.
To help with the sagging rear look into
Air Lift airbags or
Timbren Aeon convoluted rubber springs. I have the Timbrens on my crew cab and they made a difference when pulling my 8000 lb trailer. They also helped smooth the ride over bumpy roads.
