Question about the audio controls on the steering wheel

I've been reading some threads about audio installs and I've been thinking about swapping head units so I would have RCA jacks to work with. My question is would the auiod controls on the steering wheel still work with an aftermarket HU?

If they won't work with a new HU, I was considering using line converters but I've heard they are pretty noisy but I'm wondering if they'd be clean enough for a sub signal.

Thanks...
