question about replacing stock head unit

What do I lose by replacing the stock stereo in a rockford fosgate stock system? I know i'll lose my steering wheel controls and the controls for the radio in the back seat but will all the speakers, stock amps and sub continue to work off an aftermarket head unit?

How would you retrain the steering wheel controls for a pioneer head unit?
