I am looking for the best possible set up to do 3 things. I want to add bluetooth so i can play music, be able to play videos from my iphone on my screen or at-least wire in to play videos and possibly tie my backup camera into the OEM screen as well. Most importantly is the bluetooth music as well as play videos or music videos for the songs through my screen.

Your going to find limited support for apple. Apple car play is limited to mostly audio and GPS. Depending on how deep you want to go, you could run an apple tv to an aftermarket monitor/deck, but you have to setup WiFi in the vehicle (you may be able to tether it to your phone). I think this is a deep rabbit hole and more than likely costly. An aftermarket deck with HDMI input may be an option to use something like Chromecast or video adapter from apple. I think with Android there are a few more choices. I think your best bet may be an iPad mini for everything your looking for. I am by no means an expert, but I did quite a bit of research for myself. I since moved on from apple, the design was stale for me and Android offered more customizable platform. That was the long way of saying the video is going to be the issue, back up cams and Bluetooth are easy.
