I wouldn't try the 325. I've seen the basic size in other brands put on the stock rims, but Mickey Thompson suggest 9" minimum width. Even though it's a 3-ply in this particular size, you might get the side wall flexing too much. Their LT305/60/18 is only 2/10" narrower and only has the 9" minimum rim width approval.
It's a likely pinch-weld-mod tire too. As a reference, those using the popular BFG AT KO LT315/70/17, (34.5x11.6x17), on the 7.5" Off-Road package rim, and a level kit ... some have to do the pinch-weld-mod, and mud-flap modification, and others don't. It's at that hairy edge. Now the ATZ in a LT325/65/18 is 34.8x13.1x18 on a 8" width rim. Slightly taller, and more than an inch wider, (on the non-approved 8" width rims).
As far as their 2-ply sidewall models their LT305/70R18 is approved for an 8" rim, but you would likely need the pinch weld or mud-flap mods because it is a solid 35" diameter. This would really fill up your wheel well with just a level kit .... as far as the look.
Below, is an old pic of my Titan when it had 32.8x11.3x17 and was leveled, (with DRE coilovers and no lift in the back). Notice there isn't much gap ... add an inch all the way around for a 35" diameter tire, (in your mind).
So if I had 18x8 wheels and just a level kit, and would buy a Cooper Tire, (they own Mickey T, Procomp, D!ck Cepek, Dean, and others), and was willing to run a 2-ply side wall, the only ATZ I would consider buying is the LT305/60R18. But it's smallest approved width is still an 8.5" width, and coupled with only 2-ply sidewalls the flex potential may exist.
Since the pinch-weld-mod wouldn't be a big deal to me, and a flexing sidewall on a tire too wide for a stock rim is, I would pick one of these 3-ply sidewall tires, if I had 18x8 and was just leveled, with the bold'd, being my top pick:
3-ply Sidewall:
- BFG AT KO LT305/65R18/E (33.7x11.8x18), on an 8, [8.5" min. approved]. Basically a 34, and too tall looking for a level kit IMO, perfect for a 4" lift.
- BFG AT KO LT285/65R18/E (32.7x11.3x18) on an 8" width rim.
- BFG MT KM2 LT305/60R18/E (32.6x11.8x18), on an 8, [8.5" min. approved]. This is the new BFG mud tire.
- Toyo Open Country M/T 33X12.50R18LT 118Q E/10 (33.0x11.9x18), on an 8, [8.5" min. approved].
- Toyo Open Country M/T LT275/70R18 125P E/10 (33.6x11.0x18), on an 8.
- Toyo A/T LT285/75R18 129S E/10 (34.8x11.3x18), on an 8", but will fill up the wheel well, and the Toyo M/Ts have a newer casing design that is supposed to be smoother. You'd probably feel the lugs on the M/T more when first leaving a stop sign, especially when new though.
