I have read a lot of threads on tire size on this truck and it is a bit confusing. Some seem to say yeas, others no.

Basically, can I run 285/75 /17 on my unmodified (no lift or level) 2004 4x4 OR/BT 17" rim truck, without issues?
I can get a great deal on some barely used ones.
I do have blisten 5100s but on the low setting.

I run on my stock 2005 CC LE 285/70/R17. It has the off road and big tow packages but that's also the recommended tire size by the Manufacture.

I would bet that you could run that size, depending on the brand and actual diameter. I run 295x70/17 on my 2004 Off road model with factory mudflaps. The 285x75/17's will be a little narrower, and just a little bit taller.
Wheel offset affects the fit too.

Is there a formula for adjusting the offset when moving to slightly larger tires like these?
Most places will just use the factory recommendations I believe...

Yes, if you move the wheel outward, you will have more trouble with rubbing while turning (think of a larger radius from the centerline of the ball joints. Factory numbers work with factory rims. If you go just a little bit wider, you should still be ok too.

Similar question... I'm looking to change out wheel and tire on 2004 Titan SE with leveling kit. Will I have any issue with a wheel 17x9, -12 offset and a 285/75r17 tire? Anyone with similar setup or can say whether rubbing will be an issue?

You should be fine. 33's are your best bet to avoid any rubbing issues. My truck has a 2.5" leveling kit with 33's on 17" kmc xd series rims.
