My 2019 has 18" wheels. Door sticker says 265/70/18, but it has 275/65/18 on it. After comparing sizes I am thinking about going 285/65/18, which seems to be same height as 265/70/18 only wider. Would that be to wide for the stock wheel?

As has been said already, your 8" wide wheels are within the specs for a 285/65R18 tire, which calls for an 8-10" rim width. You could even go out to a 295 (provided you can find one that fits or you want to lift your truck and run the 295/70R18) on 8" wheels. I'm running 295s on my 2011 on OEM 18x8 Pro4X wheels. So far, wear is good except for a balance issue causing me problems intermittently. Pretty sure these D!ck Cepek tires aren't round, but they're okay for now and I'll run them until they're not. They perform very well off-road and aside from the need to rebalance often, they perform well on the highway.
